When I start to think about the transition from winter to spring, I get excited to start losing the running tights and jackets and trade them in for shorts and t-shirts! That time of year when running outside is exciting again and sunshine begins to stick around, I think about citrus. Head to your local grocery store, particularly in late-winter, and you will find an abundance of tangerines, grapefruits, clementines and oranges. These fruits have many different health benefits from containing flavonoids, an antioxidant that can neutralize free radicals and reduce inflammation to vitamin C, which helps produce collagen, that provides structure and elasticity for your skin and tendons. Here is one of my favorite salads to quickly grab after a run to help refuel and feel energized!

Seasonal Citrus Fruit Salad:

2 Oranges 2 Mandarins 2 Blood Oranges 1 Red Grapefruit 1 Pomegranate 1 Tablespoon local honey ½ Teaspoon vanilla extract

Peel all the fruit, segment the citrus and arrange into a serving bowl. Lastly, scoop the seeds from the pomegranate and sprinkle over the top. Combine honey and vanilla, drizzle over salad just before serving.

Serve: Thick organic natural yogurt.  For a dairy-free alternative to yogurt, combine the flesh of 2 mangoes, 1 cup of coconut cream or coconut milk and 1 teaspoon vanilla into a high-performance blender.  Blend until smooth and creamy then serve alongside the citrus salad.
